Banana Bread

Ingredients

2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

1 tsp nutmeg

¼ tsp salt

½ cup butter, softened

¾ cup brown sugar

2 eggs, beaten

5 mashed overripe bananas

1 tsp vanilla extract

4 oz applesauce

Directions

  1. Preheat the oven to 350°F. Lightly grease a 9x5 inch loaf pan.

  2. In a large bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg and salt.

  3. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Add vanilla extract and applesauce.

  4. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into the prepared loaf pan.

  5. Bake for 60 to 65 minutes, until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in the pan for 10 minutes, then turn out onto a wire rack.
