60mL lemon juice
Lemon zest
144g sugar
56g butter, room temp
2 eggs, room temp
1/16 tsp salt

In a mixer with a paddle attachment, cream the butter with the sugar and lemon zest.
Add the eggs one at a time and then the lemon juice and salt.
It will look curdled.
Pour the mixture into a saucepan and cook on low heat, stirring constantly with a whisk, until thickened, about 10 min (~175°F).
Do not boil.
Remove from heat. It will thicken after refrigeration.
