45g sugar
30g egg white
180g unsalted butter, room temp.
5g condensed milk
5g powdered milk
1 tsp vanilla extract
Directions
Directions
Heat up the water and sugar in a pot until it reaches 245°F( 118°C).
Whisk the egg whites until frothy.
Add the syrup in batches, while whisking the egg whites until it’s 69-71°F (20-25°C).
Add the butter in batches until incorporated.
Add the condensed milk and vanilla extract, and incorporate.
