2½ cups all purpose flour
1 tsp salt
½ tsp baking powder
½ tsp baking soda
1 tbsp lemon zest
1 ½ granular sugar alternative
2 eggs
⅔ cup vegetable oil
2 tsp lemon extract
1 tsp vanilla extract

Directions
Preheat the oven to 350°F.
Mix all dry ingredients into a large bowl. Beat in eggs one at a time. Stir in oil and extracts until well blended.
Drop the cookies onto the cookie sheet rather than using a scoop or rolling them out.
Bake for 8-10 minutes in the preheated oven. The cookies will be soft in the middle with slight browning on the sides/bottom when ready.
