Directions
Double boil egg whites and sugar together while whisking until mixture reaches 160°F
If using pasteurized egg whites, heat it to 50°F just enough to thoroughly dissolve the sugar granules.
Transfer mixture into a mixer and whip until it turns white and doubles in size. Let cool to room temp before adding butter.
Add the butter, gradually, and whip until incorporated.
Add flavoring of choice.
