8 cups water
½ lb pork top loin, cubed
1 ½ tsp salt, divided
2 carrots, peeled and sliced
2 potatoes, peeled and cubed
½ tsp sugar
1 tsp fish sauce

Directions
Boil the water in a pot.
Cut the pork into 1 inch cubes and soak it in shallow water with ½ tsp of salt. Rinse.
Put the pork and carrots in boiling water for 15 min.
Skim the top of the water for fat residue and then add 1 tsp of salt.
Add the potatoes and sugar for 15 min. Check that the potatoes are soft by stabbing with a fork.
Add the fish sauce (add more if bland).
