½ red onion, sliced
½ cup mushrooms, sliced
2½ cups fresh broccoli florets
1 cup spinach, washed
6 large eggs
¼ cup milk
½ tsp salt
¼ tsp pepper
⅓ cup grated Romano cheese
⅓ cup sliced pitted Greek olives
1 tbsp olive oil
Shaved Romano cheese and minced fresh parsley
Directions
Directions
In a oven safe pan, saute onions and mushroom until the onions are translucent.
Add the broccoli and saute until it starts to soften.
In a large bowl, whisk eggs, milk, salt and pepper.
Add everything to the pan and cook uncovered, until eggs are nearly set, 4-6 minutes.
Broil 3-4 in. from heat until eggs are completely set, 2-4 minutes. Let stand 5 minutes. Cut into wedges. Sprinkle with shaved cheese and parsley.
