Ingredients
4 lb skinless chicken drumstick or 2 lbs beef shank (bắp bò)
3L water
1 sweet onion, peeled
2-3 inches of ginger
2 tsp salt
1 tbsp sugar
2 tsp Knorr chicken flavored broth mix or 1 chicken bouillon cube or 1 beef bouillon cube
2 tsp mushroom powder
For serving:
onion, sliced
cilantro
jalapeño
Thai basil
sriracha
hoisin
limes
thinly sliced beef
bean sprouts
fish sauce (to taste)
1-2 lb uncooked rice sticks
Directions
Soak the noodles in a large bowl of warm water for 30-45 min.
Soak chicken/beef in salt water for 10 min. then rinse.
Put water into a pot, add meat, ginger, whole onion, salt, and sugar.
Set Instant Pot to High for 15 minutes.
Let it naturally release pressure for at least 10 minutes.
Remove the onion, add chicken powder or chicken bouillon cube and mushroom powder, mix, and remove half the chicken for serving.
If using beef, simmer for 30-45 min., remove the onion, add beef bouillon cube and mushroom powder, mix, and remove some for serving.
