Bò Kho (Vietnamese Beef Stew)

Ingredients
5 ½ lb beef shank (Bắp Bò)
3 lb carrots
9 oz lemongrass
1 garlic bulb
4 small red onions
⅔ cup olive oil
½ cup beef stew seasoning (Quốc Việt Cốt Bò Kho)
2 tbsp salt
2 tbsp sugar
⅔ + ½ cup ketchup
Directions
Cut the beef into 1 inch squares, the lemongrass into 2 in. pieces, and the carrots into ½ in. pieces.
Add the oil to a large pot on high, then add the onions, garlic, and lemon grass for 2 min. or until fragrant.
Then add the beef, beef stew seasoning, ketchup, sugar, and salt. Mix and fry until the meat is thoroughly cooked.
Add ⅔ ketchup and then taste test before adding more.
After 10 min., add boiling water until beef is submerged, add the carrots, and continue boiling on high for 10 min.
Once the pot reaches a boil, lower the heat, then cover it with the lid, and continue cooking it for an additional 20 min.
Try one of the meat pieces to make sure it is soft. Place the lid back on and continue cooking at low temperature for about 30 min. or until the carrots are thoroughly cooked.
