Chocolate Caramel Cashew Clusters

Ingredients

2 ½ cups of cashew halves or whole

8 oz white or dark chocolate (not chips)

sea salt

30 caramel squares (Kraft caramels)

⅓ cup heavy cream

Directions

  1. Arrange clusters of 11-12 cashews.

  2. Place the caramels in a bowl, pour cream on top, and microwave for 3 minutes (stopping and stirring every 20 seconds).

  3. Spoon 2 teaspoons of caramel onto the clusters.

  4. Melt the chocolate in the microwave for 1-2 minutes (stopping and stirring every 20 seconds).

  5. Spoon melted chocolate on top of each cluster.

  6. Top with crushed cashews and sea salt.

  7. Chill clusters in the refrigerator for 30 minutes.

Notes

Can be frozen for up to 3 months and thawed overnight before serving.
