2 tbsp ghee
1 onion, thinly sliced
3 cloves garlic, minced
1 tsp ginger, grated (½ tsp ginger powder)
1 tomato, diced
1 tsp cumin powder
2 tsp garam masala
½ tsp turmeric
½ tsp cayenne pepper
500 g spinach, blanched
¼ cup fenugreek leaves
½ cup heavy whipping cream
salt to taste
½ lb paneer, cubed

Directions
Heat 2 tablespoons of ghee. Add onion; cook and stir until onion begins to soften, 4 to 5 minutes.
Stir in garlic, ginger, tomato, cumin, garam masala, turmeric, and cayenne pepper; cook and stir until tomatoes break down and onions are translucent, about 10 minutes.
Purée spinach and fenugreek until finely chopped.
Stir in spinach and fenugreek, cream, paneer cubes, and salt to taste. Cover and cook for 15 minutes, stirring occasionally.
