½ cup butter, salted, softened
105 g powdered sugar
1 egg yolk
180 g cake flour
35 g cocoa powder
2 tbsp dark instant coffee
2 tbsp hot water

Preheat the oven to 340°F.
In a mixing bowl cream together the butter and the powdered sugar using a whisk. Add the egg yolk.
Mix instant coffee and hot water, let cool.
Sift together the flour, cocoa powder, and add to the bowl. Add the coffee mixture. Mix everything until it is well combined.
Shape into an oval, press the ends slightly flat. Place on a baking sheet. Oil a knife and make a cut in the center of each cookie.
Bake for 15 min. Let cool for 5 min.
