Black Bean Burger

Ingredients
2 can (15 oz) black beans, drained and rinsed
1-2 green bell peppers
1 small onion
1½ cup bread crumbs
2 tbsp chili powder
1 tbsp cumin, ground
1 tsp garlic powder
½ tsp smoked paprika
salt and pepper to taste
2 large egg, beaten
Toppings:
brioche buns
lettuce
tomato
avocado
red onion
chipotle mayo
Directions
Preheat the oven to 325°F.
Spread beans evenly onto a lined baking sheet and bake for 15 minutes until slightly dried out.
Meanwhile, sauté olive oil, chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes.
Place everything in a large bowl. Mash with a fork or by hand, leaving some larger chunks of beans.
Form into 4 patties.
Cooking methods:
Bake: Place patties on a parchment paper lined baking sheet and bake at 375°F (191°C) for 10 minutes on each side, 20 minutes total.
Grill: Place patties on greased aluminum foil and grill 8 minutes on each side. Heat temperature is personal preference as all grills differ. Generally, black bean burgers should be grilled on medium-high heat about 350°F (177°C) – 400°F (204°C).
Pan-fry: Cook over medium heat in an oiled pan for 4-5 minutes on each side.
Serve with your favorite toppings. Store leftovers in the refrigerator for up to 5 days.
