1 lb pork belly, cubed
3 tbsp vegetable oil
2-3 shallots, sliced
3 cloves garlic, minced
3 tbsp sugar
2 cup coconut water
1 tbsp mushroom powder
3 tbsp fish sauce
3 tbsp Maggi
8 hard-boiled eggs

Directions
Add an inch of water in a pot, add the eggs and let boil.
Once boiling, cover, turn off the heat, and leave in the pot for 7-10 minutes.
Put eggs in an ice water bath and then peel the eggs.
Poke the eggs all over with a fork/chopstick.
Soak pork in shallow water with 1 tsp of salt for 10 minutes. Rinse.
On a pan, add vegetable oil and cook garlic and shallots until fragrant.
Add pork and sugar, cook for 5 minutes.
Add mushroom powder/MSG, coconut water, fish sauce, and Maggi.
Add the eggs to the broth.
Simmer for 30 minutes, until the pork is tender.
